Can I just tell you we have the BEST landlords?! Seriously, we hit the jackpot of all jackpots when it comes to landlords. They are the absolute nicest family and have been so kind to us since moving here a year ago.

A YEAR AGO!!!!

Can you believe it???! We have been settled in our home in Hawaii for a year now. Where does the time go? Oh wait, I know exactly where it goes. It goes to the beach, to the pool, to gymnastics, to dance class, to surfing, to hiking, to blogging, to baking, to entertaining guests, to being entertained by guests…you name it. That’s where all my time goes.

And you know what? I wouldn’t have it any other way. I LOVE being busy even if it is a constant time sucker.

But back to these extraordinary landlords of ours. Here are just a few examples of their super awesomeness:

  1. They chose us over another couple to be their tenants because they were impressed with our level of greatness. Okay, maybe not. In reality they chose us because we said we were clean, or in other words: OCD neat freaks.
  2. They send pest control on a regular basis so I don’t have to shower or sleep with disease infested roaches, giant spiders, or creepy crawly centipedes.
  3. They bought us a new fridge and a new washing machine. Otherwise we would be starving and naked because I’m pretty sure I couldn’t fix either.
  4. They have invited us trick-or-treating, to a block party, and their son’s birthday party all at their home. I guess that means they trust us to know where they live. I promise I’m on my best when we visit.
  5. They brought us a plant for a housewarming gift when we first moved in and it has proven to be the longest living thing I have ever kept alive. Well, except for my children. But regardless, it makes me feel special.
  6. They make improvements/repairs to the home on a frequent basis, attend to the yard work which is probably my least favorite chore in life, and offer up their truck or services whenever we need to make trips to the dump. Apparently we attract a significant amount of junk.

See, pretty much they are my favorite. Definitely not as sweet as you would expect an average landlord to be. And, as impossible as it seems, they just get even sweeter over time. Again, we are blessed.

So besides having gems for landlords, let’s talk about another jewel that is sweeter than expected, bursting with all kinds of glorious goodness.

BEETS BABY!!!

Not just any beets (because I do love all kinds of beets), but I am talking about fresh out of the oven, drizzled with olive oil, seasoned with sea salt and pepper, heaven sent Roasted Beets.

How have I never made these before?!

How have I avoided buying those weird looking roots for the past 33 years of my life thinking they were too difficult to make, way outside of my comfort zone of roasted veggies?!

Just goes to show, you gotta face your fears, take the bull by the horns, and bake yourself some beets every once in a while! Really, these were like the easiest thing I’ve made in ages. All you do is peel the skin off, cube up the flesh, drizzle with a bit of olive oil, season, and bake for 30 minutes. Does it get any simpler than that?

And you know what’s even better? I didn’t even stain my clothes. Nope, not one single drop of that unforgiving purple juice got on my clothes. Now that’s a success beyond measure!

As the beets roast in the oven, they become tender and release sweet juices that slightly caramelize the outer edges. You can eat them right out of the oven (they are pretty dang irresistible so this may be unavoidable) or you can chill them in the fridge to add as a salad topper for your next meal. Either way, they’re delicious!

We even added these beets to some southwest steak tacos the other night and it added such an exciting element of flavor to the tacos. I also love pairing beets with goat cheese on top of pizza or in a salad. Those two ingredients are pretty much meant to coexist.

Oh, and just a quick word of warning before I forget. Eating beets may turn your poop a weird color. Sorry for the TMI, but Ben was about ready to check himself into the doctor after examining his odd colored feces. Thankfully he has a wife that reassured him the hue was due to a few servings of beets and purple cabbage. Oh babe, I love you!

So there you have it. If you aren’t fortunate enough to be surrounded by an outpouring of sweetness in life like I feel we are, create your own. Whether that’s making roasted beets or eating an ice cream sundae, everyone deserves a huge helping of sweetness here and there. I would just maybe enjoy the former before the latter. I’m a fan of eating your veggies first.

Recipe type: Side Dishes
Serves: 4-6 servings
Ingredients
  • 2 large beets (3 medium or 4-5 small), peeled and chopped into ¼" cubes (about 3 cups)
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon pepper
Directions
  1. Preheat oven to 400 degrees and line a baking sheet with aluminum foil. Spray with cooking spray.
  2. Peel beets and chop into ¼" cubes. Spread onto aluminum foil. Drizzle with olive oil and sprinkle with salt and pepper. Toss to evenly coat.
  3. Bake beets at 400 degrees for 30-35 minutes or until tender. Remove from oven and eat warm or chill in fridge for 3-4 hours before topping on salad.
  4. Store leftover beets in airtight container in fridge for up to 5 days.
