Key Lime Coconut Bars

It was HOT today! Like really hot. Like I wanted to strip down to my undies and lay in a freezer hot.

But then I reminded myself that it is summer and I live in Arizona. That’s life.

I kept my clothes on.

End of story.

However, if I am going to endure these heat laden days under the merciless Arizona sun, I had better look forward to at least something during the summer. And there is nothing better to look forward to than dessert.

Seriously, I pretty much anticipate dessert all day long. What says happy summer better than a cool, refreshing dessert?!

Since I usually save my daily sweet for the end of the day, a perfect treat can cure almost any miserable, sweaty day. In fact, if the treat is good enough I may just be able to convince myself that I just spent the entire day laying on the beach in the Bahamas…one can only wish.

Coconut Lime Bars

Although a Bahamas vacation may be a little farfetched, a perfect summer treat is not. And I think I have discovered just the treat.

Key limes, coconut, brown sugar, whipped cream…there’s no denying this is a lovely combo. Combine them into chilled individual dessert bars and you’re destined to have a crowd pleaser.

I gave a bunch of these away to neighbors and received rave reviews. We even had a family over for dinner the night I made them and they asked to take some home. Of course I shared the wealth. I’m just nice like that.

I know, I can’t help it.

    ive been seeing quite a lot of recipes with coconut but havent seen key lime coconut bars yet. super impressive. i just love the combination of lime and coconut, makes me feel tropical!
