Well it’s time for another guest post recipe post! I promise, I only have a few more of these left and I will be all caught up…for now.

I figure it’s only appropriate to post this decadent gluten free Pineapple Bundt Cake with Broiled Coconut Frosting since we are moving to the land of pineapples. Apparently Dole has a pineapple plant right on the island of Oahu, where we will be living.

Ben and I are pretty much PINEAPPLE fanatics. Give me a perfectly sweet, ripe and juicy pineapple, and I am in heaven. Ben eats it like it’s going out of style, even though he claims he is allergic to it. He loves it so much that it is one of the VERY FEW fruits that he will actually cut up and prepare himself for a little snack. All other fruits just sit there on our counter top waiting for me to prepare and serve them. Lazy boys.

So if pineapple is so dang yummy, then of course it would make any cake taste amazing, right??? RIGHT?!

I’ll answer that for you. Yes. It. Will.

And you know what will make it taste even better? (if that’s even possible)

I’ll tell you what. Broiled. Coconut. Frosting.

YES!

This cake is heavenly moist from all the pineapple chunks and pineapple juice. Plus I used some coconut flour which always bakes up really soft and tender as long as you use the right liquid to flour ratios.

I made sure to really crush up the pineapple into fine pieces since my kiddos are picky about fruit chunks in their cakes or muffins. They didn’t even notice the pineapple bits in this cake. All they noticed was the intense tropical flavor that was an immediate homerun judging from their empty dessert plates.

But really, my favorite part about this tropical cake is the frosting. It’s basically like German chocolate cake frosting that you broil on top of the cake until it’s warm with a crisp sugary shell. I could just eat this stuff plain. It’s soooo definitely worth the extra five minutes in the oven. Trust me.

Now you at least have to promise me that when you make this cake, you will think of us living out an adventure an ocean away in paradise.

          I feel for you. I was so sad for my daughter when she was diagnosed with celiac because I grew up loving to bake. I thought she would miss out, but we have had a blast discovering some yummy gluten free goodies. Now bread…that’s another issue. Ugh!

            Yeah it sure is. Laura is lucky she can eat a little gluten but has to watch it. Like you I love to bake so it has put a cramp into holiday fun, but health must come first.
