I like simple. When things get too hectic, chaotic, or crazy…I am not the most functional adult.

Now, I don’t mean to confuse chaos with busy. I love being busy. I just need it to be “organized busy”. Does that even make sense??? I guess what I’m saying is that I need to know what I’m doing, where I’m doing it, when I’m doing it, why I’m doing it, and how I’m doing it. If all of those questions can be answered, then I’m all good.

My house was beginning to turn into an endless pit of crazy as of late, with all the mounds of, for lack of a better word, CRAP that has piled up. My kids have random toys from birthday parties, McDonald’s (against my better judgement), the dollar section of Target, you name it.

I have a formula. Take the weight of your child, multiply it by 50, and that’s about the amount of junk they accumulate on a yearly basis. If you don’t filter through the abyss “stuff”, you will slowly be forced out of your own home.

Well not on my watch!

Seriously, I turn into such a crabby mom when I feel like junk is overtaking my living space. I’m not even nice about it anymore. I throw/give away my kids’ artwork, toys, clothes, and other possessions right in front of them. I explain that we need to make room for “better” things and they seem to be fine with it.

Last weekend we went through their entire playroom as well as the girls’ bedroom filling boxes with toys and clothes they never use. I gave the hand-me-downs to a friend of mine and, let me tell you, I’ve never felt so liberated.

I could BREATHE!

The best part is that my house has stayed fairly clean and organized since getting rid of so many articles. My girls even seem to be happier because they are left with just the things they need and really enjoy. We had 8 kids over this evening for dinner and the house wasn’t even that ransacked by the end of the night. It was glorious!

I’m telling you, SIMPLE is the solution. Yes, indeed.

So you can imagine my excitement when making this Gluten Free Microwave Teriyaki Sauce.

I know, how many recipes do you see with the word “microwave” in them. It’s slightly embarrassing. I’m not sure I want to parade around the fact that I just nuked this sauce in the microwave, but that’s how it’s done. So there.

You won’t even believe how easy this sauce is to make. The hardest part is going to the grocery store to buy your ingredients. But once you have them, you can make this sauce in a jiffy anytime you need.

I love a sweet teriyaki glaze in my rice bowls, inside an Asian taco, or on top of a salad. The problem is, I can never find gluten free versions in the stores. They sell teriyaki sauce, but it is the watery version very similar to soy sauce.

That’s not how I roll with my teriyaki sauce. I need it sweet and sticky. No other way.

So, I just had to make it myself. The night I made this, we were having Ahi fish tacos and I was in a mad rush. I was literally throwing things in bowls, pans, and plates left and right. I could hardly keep track of what I was doing. But amidst all the frantic flailing that was me in the kitchen, I knew we needed a sweet teriyaki sauce to pull together all the flavors of the tacos.

I whipped up this sauce in literally less than a minute and threw it in the microwave for 3 minutes to thicken. BAM! Done. Annnnnnd…it was delicious. So, you know, win win right there.

Since making this sauce, we’ve used it in tacos, on top of stir-fry, as a condiment in teriyaki burgers, and for a dip with sweet potato fries. It’s just that good.

So embrace the simple and push those buttons on that microwave with pride. Ain’t nothing wrong with that!

Serves: 5-6 servings
Ingredients
  • ¼ cup gluten free teriyaki sauce (I like San-J brand)*
  • 1 tablespoon sweet chili sauce
  • 1 tablespoon plus 1 teaspoon honey
  • 1 tablespoon rice vinegar
  • ¼ teaspoon jarred garlic juice** or garlic powder
  • ½ teaspoon sesame oil
Directions
  1. Combine all ingredients into a microwave safe dish. I used my Pyrex 2 cup measuring cup. Microwave on high for 3 minutes on high. Remove from microwave and stir.
  2. Mixture should lightly coat the back of the spoon as it cools. If mixture still seems too runny after cooling, return to microwave for an additional 45 seconds to 1 minute on high.
Notes
*Use a liquidy teriyaki sauce. This recipe will not work with an already thickened teriyaki sauce.
**I just use the garlic juice in my minced garlic jar in the fridge.
