If there was a kingdom named “Leftovers”, I would rule it as a heavy-handed dictator, taking no moans, groans, complaints, or rolly eyes from anyone living in my land.

You don’t like it??? GET OUT!

Man, would I die to be a dictator for just one day. I think that is every control freak’s dream come true.

Let’s start this post off by explaining that although I do not meal plan in advance, I use up almost every ounce and morsel of the food in my fridge in preparing breakfasts, lunches, and dinners for my family. What I make for dinner depends on what is staring me in the face at 5:00 in the evening when I open that right side of the fridge door.

Broccoli? BAM! Stir-fry.

Eggs??? WAHOO! Omelets.

Ground beef or turkey?! EASY PEASY! Pasta (of course), tacos, or lettuce wraps.

Chicken? MY FAVORITE! How about grilled chicken sammies or simple skillet crusted Italian chicken? I gotta post that latter super simple recipe someday. It’s a go-to around here.

Absolutely nothing??? AHHHHH! That’s the only time I freak out. It’s time for a grocery run!

Just fill with your favorite fixings and reheat on the griddle for a warm and toasty meal.Most nights, although my kids are nipping at my heels croaking that they’re hungry, and insisting on helping me with dinner every step of the way, I’m usually as “cool as a cucumber” when it comes to making food.

The raging maniac doesn’t come out until food is being WASTED. Then I’m not so nice.

Braelyn knows that when she comes home from school and is hungry wanting a snack, the first thing she has to do is finish the remains of her lunchbox. And what is ALWAYS leftover? Her veggies!

“Eat up!” I say. Hehe!

Ben rolls his eyes many mornings when I politely ask him (Bahahaha! Who am I kidding?! I could always be nicer.) if he needs a lunch packed. He would much rather eat out and drink a soda because, let’s face it, what guy wouldn’t? He reluctantly accepts my offer to make him lunch and awaits what leftover surprise it will be.

Yesterday I was packing Ben’s lunch for his on-the-go workday, but he got stuck working from home all through the morning and into lunchtime. So, when it came time for him to bust out the goods, I was there staring him in the face as he peeled open the foil inside his lunchbox. He about died laughing when he took his first bite of sandwich and realized what it was…

“Is this the leftover FRENCH TOAST from last night?!”

“Why yes it is, babe. Yes it is!”

Now he may not have been that excited to eat a COLD Gluten Free Leftover French Toast Sandwich, but as luck would have it I was right there in the kitchen to spruce it up on the stove. What started as just another cold, random leftover in his lunchbox quickly turned into a warm and toasty, melty and gooey, flavor-packed sandwich.

I’m telling you, if you have leftover french toast YOU HAVE GOT TO TRY THESE!

Although I love French toast, I’m not one that can eat it more than once every few weeks. It’s just so rich and sweet! So I always try to pawn off the leftovers on Ben and the kids the next few mornings. But this time I thought, “Hmmm, why not sandwiches?”

I love the texture that the egg mixture gives to the bread in French toast. It adds that crisp outer edge with a moist center. Plus, if you fry it up in some butter, that adds even a whole ‘nother level of flavor.

By just adding in your favorite sandwich fillings and re-frying it up on the skillet, you instantly get yourself a warm and toasty sandwich perfect for those fall evenings. After Ben was making fun of me for my frugal leftover ways, I had the last laugh because he ate every last crumb of that sandwich and admitted that it was pretty darn good. Joke’s on you, you turd!

I was even telling my mom about my new creation and she thought it was quite clever, pointing out that I had basically made a revised version of a Monte Cristo.

So what lucky toppings made it into Ben’s French toast sandwich? I’ll tell you:

  • A light layer of mayo
  • A handful of tamed pickled jalapeno peppers
  • A squirt of mustard
  • A few shavings of honey baked deli ham
  • A slice of sharp cheddar cheese
  • A couple of slices of avocado

Add a bit of salt and pepper, and you’ve got yourself a winner! Really, you can add whatever fillings you like to make your perfect leftover sandwich. And if you’re one that just doesn’t eat leftovers??? Well you do now!

Serves: 1 serving
Ingredients
  • 2 pieces of leftover French toast
  • 1-2 tablespoons mayo
  • 1 teaspoon mustard
  • 6 pickled jalapenos
  • 4 slices of deli ham
  • 1 sandwich size slice of sharp cheddar cheese
  • ¼ avocado, sliced
Directions
  1. Heat skillet to medium low heat (4 out of 10) while preparing sandwich.
  2. Fix sandwich as you would a traditional sandwich.
  3. Place sandwich on skillet and place a heat resistant bowl or lid over sandwich to trap in the heat and help melt the cheese. Heat for 3-4 minutes on one side. Carefully remove bowl, flip, and heat the other side for an additional 3-4 minutes with bowl covering the sandwich.
  4. Continue to flip sandwich and heat for 1-2 minutes more until both pieces of bread are crisp and heated through and cheese is melted on the inside.
  5. Serve warm.
