I didn’t realize when I signed up to be a part of this event that I would be the blogger closing out the baking section of the series. In fact, I didn’t even see the email inviting me to the series for an entire week because it got filtered to my junk mail folder, even though I participated last year. Weird.

Anyhow, I frantically clicked on over to the Google doc to sign up and typed my name in the very last slot available. Phew! It was meant to be.

And you know what else is meant to be??? This cake on your plate. Or if we throw out manners…this cake in your mouth, all over your face, and in your belly. MMM! Can’t argue with that.

This Gluten Free Cranberry Clementine Cake with White Chocolate Ganache just screams “Christmas!!!” And that is the ONLY kind of screaming that I will tolerate in my house. Just ask my girls.

Which, by the way, WHYYYYY do girls scream??? I just don’t get it. That high pitch squeal, whether it originates from laughter or crying, just sends me through the roof. I swear, even being a girl, that I never screamed like that as a kid. At least I don’t think I did…

The idea for this cake started from a can of cranberry sauce in my pantry. I knew I wanted to make homemade cranberry sauce for Thanksgiving, so I wasn’t sure what I would use this can for. And you know me, I can’t let food go to waste even if it is a cheap can of cranberry sauce.

So instead of the traditional use of garnishing your turkey, I figured I would go the dessert route with it. CAKE! A fancy cake at that.

This cake is not nearly as hard to make as it looks. And I LOVE  cakes like that. Cakes that appear to have taken all day to bake, but in reality only took an hour to make (and that includes decorating).

You’re basically making a clementine infused vanilla cake and swirling it with cranberry sauce at the end to give it this beautiful marbled effect. And then before stacking, you melt some heavy cream and white chocolate together to create this heavenly white chocolate ganache that is a cross between a glaze and a frosting. Oh, and you add clementine juice and zest to that as well. Yumm-Oh!
