Cinnamon Pear Pancakes

Guess what I discovered?! A new gluten free flour mix that works wonders! No, this is not a sponsored post, but if you know somebody that would like to pay me to endorse their product, send them my way. My self-respect is at best mediocre so I’ll support just about anything. Haha! Yeah right!

But really, if I find something I like I don’t mind writing about it and letting you all know my experience with it. I’ve had some great results baking with King Arthur’s Gluten Free Multi-Purpose flour mix. When I am in a bind and want to whip up something quick, I can usually count on this mix to do the job. I like how there is no xanthan gum added, so I can easily adjust how much I need depending on the recipe. I find that if there is too much xanthan gum in a flour blend, your baked goods turn out gummy, especially with things like muffins and bread.

That being said, I was at the grocery store the other day and spotted a new King Arthur gluten free flour called Gluten Free All-Purpose Baking Mix. This blend has xanthan gum already added as well as a leavening agent so you don’t have to whip out your baking powder or baking soda. I was curious as well as skeptical when buying it, but I have to say that so far I’ve been impressed.

Gluten Free Pear Pancakes

My first shot using this blend was with mixing up a batch of Cinnamon Pear Pancakes. As sweet as these pancakes are, you would never guess that they are completely sugar free. I used pure maple syrup and mashed pears as my only sweeteners. These pancakes are out of this world with a drizzle of pure maple syrup and a dollup of maple whipped cream. Okay, I said the pancakes were sugar free. The whipped cream is another story. Mmm mmm!

I was beyond satisfied with the texture of these pancakes. They truly were that “light and fluffy” pancake that everyone asks for. I wouldn’t even know that these lovelies were gluten free. Even Ben who is completely unfiltered with offering “constructive criticism” of my baking had nothing but praise for these breakfast babies.

When making these pancakes you will want to make sure to really mash those pears up well. You want them the consistency of applesauce so you aren’t left with any chunks that will create soggy pockets in your pancakes. Other than that, this recipe is pretty much fool proof.
