Cinco de Mayo Recipe Roundup

Happy Cinco de Mayo! Do we really need another reason to eat some delicious Mexican food?! I think not.

Cinco de MayoI’m going to make this brief since I have a crazy 21 month old climbing on and off my lap, poking at our touch screen computer and vigorously tapping away at the keyboard. In fact, if there are any typos in this post, I know just who to blame.

Now I haven’t been a food blogger long (coming up on 6 months) so my collection of Mexican dishes isn’t too large, but here are some simple tried and true tasty dishes that highlight the flavor and spice of Mexico. Buenos dias and enjoy your fiesta!

1. Green Chile Chicken Enchilada Bake – this lasagna type enchilada casserole is made using a homemade salsa verde from oven roasted onions, jalapenos and tomatillos. Serve with a cilantro lime dressing and some fresh guacamole.

2. San Antonio Stew – bold Tex-Mex flavors are abundant in this hearty and healthy stew. Easy to make as long as you have a can of salsa and some stew meat on hand. Filled with ender pieces of beef and bite sized chunks of carrots and zucchini. Fresh corn makes this soup really shine.

3. Simply Guac – a simple base recipe to make an amazing guacamole. Spice it up with whichever mix-ins you would like. Go bold with jalapenos, cilantro and extra lime or keep it simple with diced tomatoes. This makes a great appetizer to any Mexican meal.

4. Pork Chile Verde – adjust the level of spice in this stew by adding less or more of the jalapeno seeds. The base of this stew comes from oven roasted onions, jalapenos and tomatillos. A touch of honey and cinnamon balance out the spice in this dish.

5. Salmon Fish Tacos – by far the best fish tacos I’ve ever had! Salmon is my go to fish and it really compliments the flavors in these tacos. The creamy lime cabbage slaw gives the perfect texture to the soft white corn tortillas. Top with pico de gallo and creamy cilantro ranch dressing.

6. Fajita Baked Potatoes with Creamy Cilantro Ranch – these are the winners for our fiesta tonight. I originally made these vegetarian, but today I’m going to throw in some salsa and brown sugar slow cooked pork on top. The fajita blend of colorful peppers, black beans and fresh corn really ramp up the flavors of these baked potatoes. Find the recipe for my Creamy Cilantro Ranch in this post.
