Chocolate Coconut Zucchini Cake

So pretty much if you want something chocolaty and decadent and fudgy and moist and rich and…well, you get the point…you’ll want this! If this is the mood you’re in (a mood that I engage in about 95% of my life) then this Chocolate Coconut Zucchini Cake will not disappoint.

I reached a milestone in my life with baking this cake. I made my first double layer cake! That’s right, I even had to buy two round cake pans in order to execute this nagging idea of a delicious double layer chocolate zucchini cake.

I’ll tell you one thing, there was a whole heck of a lot of praying going on during this experiment. Not only was the recipe entirely made up (which I tend to do most often nowadays) but I am no cake decorator. Excuse me, but let me rephrase that. I am the farthest thing from a cake decorator that you can imagine.

I hate crafts. Whether it be with paint, glue guns, and sewing needles or cake, frosting, and sprinkles. Artistic creativity is just not my thing.

Chocolate Coconut Zucchini Cake

I literally stared at these two cakes in their pans for a good 5 minutes before I mustered up the courage to flip them out of their pans. Then I stared at them for another 5 minutes calculating every detail of how I was going to stack them and how to most perfectly spread my frosting to create a passable cake. Well, prayers must have been answered because to my amazement I completely transferred and frosted a pretty dang fancy double layer chocolate cake.

This Chocolate Coconut Zucchini Cake is so rich and decadent, with a subtle coconut flavor to cut through the dark chocolate. The zucchini makes this cake so moist and tender along with the coconut oil and coconut milk. The great thing about this cake is as long as you use dairy free chocolate chips, it is not only gluten free but dairy free as well.

Even the frosting is dairy free, using coconut oil and coconut milk along with cocoa powder and powdered sugar.

This frosting is to die for!

It spreads easily and sets almost like a ganache. Just like the cake, it had a subtle coconut flavor to compliment the chocolate. If you really love coconut, then you have to finish this cake off with a flaked coconut topping, or even toast it for a bit of crunch to your cake. Either would be a hit.
